A Big Birthday, a Beautiful Beach, and a Bad Cold

Jerry and I spent my birthday week in Aruba. It was beautiful, warm, sunny, and (apparently) germ infested.

A constant influx of mojitos is the perfect cure for a sore throat!

Don’t worry. I didn’t catch that kind of bug.  I just caught a cold.  Somehow, the beautiful sunshine and warm temps kept the worst of the sickies at bay while we were on vacation.  When we landed back in Boston, my days started looking more like this…

Mint tea with honey and lime...not nearly as good as a mojito for soothing a sore throat.

Of course, after being gone for a week I had nothing in my fridge. So, it was time to go to the store. What did my germ-addled brain pick up?

Oranges, orange juice, orange soda and orange jello. Do you sense a theme?

When I have a cold, I crave anything orange. The one thing I crave more than all other-things-orange?

Guilty pleasure alert!

Guilty pleasure alert!

I’m one of those people who has to walk quickly past the Orange Julius counter at the mall…otherwise I might find myself ordering a completely unnecessary, calorie laden treat of suspect origin.

What is that bizarre powder stuff they put in those drinks, anyway?

Whatever it is, I crave it like crazy when I’m sick.  Like…crazy.

So, I went to the handy-dandy interwebs and found myself a copycat.  And then I messed with it a bit so that it was exactly what I wanted.

I know what you’re thinking.  I should avoid dairy while I have a cold, and this recipe has dairy.  If I was in a better mind when I was grocery shopping, I would have picked up some Almond Milk.  And, raw egg white probably isn’t the best thing for my weakened immune system.  Feel free to substitute that pasteurized egg white stuff (about 3 tablespoons should do it.)  Just don’t skip the egg altogether.  You want it for the froth.

Yummy, yummy froth...

Yummy, yummy froth…

Copycat Orange Julius

(Recipe makes 2 drinks. If you’re drinking alone, the second one can hang out in the freezer for a few minutes while you pound the first.)

1 cup orange juice
1/2 cup skim milk
1 1/2 cups ice (or about 6-8 ice cubes)
1 egg white
1 teaspoon vanilla
splenda or sugar (to taste)

Put it all in a blender and whirl away until it’s frothy and the ice is broken down into very small shavings. And then blend it a teeny bit more…just to be sure.

If you don’t get to drinking right away, the drink is going to separate, which is a-okay by me.  Froth is yummy…

Look at all that froth!

Look at all that froth!

I think I’ve downed about a dozen of these in the past week. No salmonella yet, and the cold is much better, thank you very much!
